Grilled Chicken Bacon Alfredo

I was looking for recipes several months ago and I came across Paula Deans recipe for Chicken Bacon Alfredo.  Then I found a recipe on Pinterest that used grilled chicken from Plain Chicken. Well, I decided to combine the two and make my own concoction.


The family loved it.


GRILLED CHICKEN BACON ALFREDO

ingredients:

  • 3lbs of skinless boneless chicken breast or chicken breast strips
  • 1 jar of your favorite Alfredo sauce or homemade ( I cheated and used pre-made)
  • 1lb of bacon, cooked and crumbled
  • 2 boxes penne pasta or fettuccine
  • Italian seasoning
  • salt and pepper

instructions:

  1.  Cook bacon and crumble, then set aside. Reserve 2 tablespoons of bacon grease
  2. Cook pasta, drain, reserving 1/2 cup of pasta water. Pour pasta back in pot and set aside
  3.  Season chicken with salt, pepper and Italian seasoning, then grill until thoroughly cooked, set aside but keep it warm.
  4.  Add bacon, alfredo sauce, bacon grease and reserved pasta water to pasta over medium heat, stirring occasionally until heated through.
  5.  Spoon onto plate and then top with grilled Chicken.

Serve with garlic bread and ENJOY!!
