Let's talk about comfort foods; I am amazed how the subject only seems to come up during the colder months on blogs, however if your family is anything like mine, comfort foods can be eaten anytime of year.

This particular dish will be requested by my adult kids and my oldest grandson any time of the year...yes, even when the temps are hovering in the 100's!  Yes, We love this chili!

In fact, my family would rather eat this then regular chili AND Mr.DH co-workers are always driving him crazy, once the weather starts to turn cold, about me making it for them!

My middle son swears he could live off it for a week and never tire of it; his best friend, who is in Afghanistan, gets tortured with pictures every time I make it. Poor guy!


This is what I use to feed 9 with about 2 bowls left over.

Ingredients:


WHITE CHILI

ingredients:

  • 3  14.5oz cans Great Northern Beans
  • 2 14.5oz cans Chicken Broth
  • 2lbs skinless, boneless chicken breast
  • 1 10oz can diced green chiles (I use mild or medium)
  • 3 teaspoon white or black pepper
  • 3 teaspoon cajun seasoning
  • 1 teaspoon cayanne pepper
  • 1 teaspoon chili powder
  • 1 tablespoon red pepper flakes
  • *favorite toppings

instructions:

How to cook WHITE CHILI

  1. Boil chicken until cooked
  2. Shred chicken, place in crock pot
  3. add all ingredients to crock pot
  4. cook on low for 6 to 8 hours (stirring ocassionally)
  5. Once done, spoon into bowls and top with favorite toppings

Make up some corn bread, add your favorite toppings, personally I don't add any toppings, and enjoy.

    I've never made this kind of chili but it sure sounds good...especially when it's cold outside! We usually make chili for Super Bowl Sunday but didn't this year. Maybe it's time to try your recipe...something new! Thanks for the recipe!
