Cheddar Broccoli Cups


Do you have trouble getting your kids or an adult to eat broccoli?

I have never had that problem but the side dish in this post may help you if you have a picky eater.

When I pinned this recipe (or click here Daydream Kitchen) I wasn't sure how my family would feel about them.Well . . .They LOVED them so much that I am thinking about making these for Thanksgiving Dinner this year. Yea!! They are that good!!


CHEDDAR BROCCOLI CUPS

ingredients:

  • 1 cup quick cook rice (1 cup equals one bag)
  • 1 can chicken broth
  • 1 - 10oz box frozen broccoli, thawed (make sure you wrap the broccoli in a paper towel to remove all the excess water.
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 2 eggs, lightly beaten
  • 1/2 teaspoon pepper and salt
  • muffin tin
  • and for topping
  • 1/4 cup shredded cheddar cheese

How to cook CHEDDAR BROCCOLI CUPS

  1. Preheat oven to 350 degrees.
  2. Make rice according to package BUT substitute water with the can of Chicken Broth.
  3. Once rice is cooked and cooled enough to touch 
  4. place in large bowl and combine all above ingredients (except cheese for topping). Make sure it is combined well 
  5. then using and ice cream scoop or large spoon, place mixture into greased muffin tin. Top with shredded cheddar cheese.
  6. Bake 25 minutes or until golden brown
