Quick Beef Bean Quesadilla
For dinner the other day we wanted something quick and easy.
Why not have quesadillas?
They're easy to make...
especially when you have everything you need right in the kitchen.
QUICK BEEF BEAN QUESADILLA
ingredients:
- refried beans.
- ground beef, chicken (or whatever your favorite meat is)
- grab some tortilla shells
- lettuce
- diced onions
- diced tomatoes
- sour cream
- McCormicks Taco Seasoning
- mexican cheese blend
- and salsa (optional)
instructions:
How to cook QUICK BEEF BEAN QUESADILLA
- 1. Cook your meat, add any seasoning your prefer and onions. While your meat is cooking, also cook your refried beans. Once cooked, turn burners down to low; so they stay warm.
- 2. While these are staying warm, shred your lettuce and dice the tomatoes.
- 3.Grab your frying pan, spray with non-stick cooking spray and get ready to cook.
- 4. I like to combine my ground beef and refried beans together, this step is optional.
- 5.Take 2 tortilla shells; pile your bean/meat and cheese on one, then place the other one on top. Place this in your pan, on medium.
- 6.Cook long enough to melt the cheese and the tortilla shells (make sure to flip) are a light golden color.
- 7.Top with lettuce, tomato, sour cream or salsa, tortilla chips, and serve.

since this area didn't need as much attention it was finished in a flash.
Plus with the redo of the kitchen which meant going through all the stuff I have...I made the decision to only decorate with things (whether antique, reproductions, family treasures, or new) that I absolutely LOVE!

The color in here is the same as the kitchen...
I love this color.
I had it mixed special and it changes with the light.
However, this area is so difficult to photograph (a glare, too much light, not enough light, etc) that it is hard to get a picture that shows the true color...
so please excuse some of the images.
can't remember where I got the reproduction bakers cart, but I have had it for several years. It has been repainted about 4 times and served as an island in our old house.

B.L.T. Egg Salad Sandwich
Every now and then I get the hankering for a BLT sandwich...
and an egg salad sandwich...at the same time...
but which to have??
Well, no more do I have to pick either or when this happens...
I just combine the two...
a Bacon Lettuce Tomato Egg Salad Sandwich!
It is so delicious and the best thing...
You can have it for breakfast with a wedge of cantaloupe,
for lunch with a pickle spear and your favorite chips,
or for dinner with seasoned fries.
And it is easy to prepare!
Just use you favorite egg salad recipe,
cook up some bacon,
grab lettuce, tomato, mayo,
and layer it on your favorite toasted bread.
