Easy Bean Soup

I have always loved my moms bean soup recipe that was past down from her mother...
BUT, I have never liked how long it takes to prepare. You know...soaking the beans overnight, adding the ham bone and letting it simmer all day.

Oh...My mouth is watering.


Anyways...My mother would make enough and freeze it for a later meal or lunch for moi!!

My mother gave me the recipe, when DH and I got married. And out of our 29yrs together I have only made it this way...3 times! I just don't have the patience to wait. However...my mother knowing me oh so well... also included the recipe for quick bean soup.

Now of course, nothing beats the taste of the original...
this one does come very close when you decide you want it for lunch, which happens to me quite often.




QUICK EASY BEAN SOUP

ingredients:

  • 2-15oz cans Bush's Great Northern Beans
  • 2 to 3 strips of bacon
  • water
  • a dash of dried minced onion
  • pepper to taste
  • NO Salt the bacon adds enough.

How to cook QUICK EASY BEAN SOUP

  1. 1. in a sauce pan add beans, bacon, pepper, minced onion and about 1/4 cup of water (I use the empty bean can, so it may be a little more or a little less)
  2. 2. bring soup to a boil, making sure you stir
  3. 3. turn down heat to medium and low boil for about 45 mins, making sure to stir
  4. 4. when the 45 min is up turn down to low and simmer 30 min to 1 hour.
  5. 5. Once finished spoon, serve and enjoy!
